Baked Broccoli Bites!

My Baked Broccoli Bites recipe is as simple and tasty as it comes. I love making up a batch of these as a side dish to any meal, as a quick appetizer or even an after school (or after work) snack! Just like most of my recipes these broccoli bites only have a few ingredients and requires very little skill in the kitchen- just the way I like it!!! Nutrition facts for the whole recipe (using 2 stalks): 282 calories, 20 carbohydrates, 8 grams of fiber, 14.6 grams of protein, 19.7 grams of fat (mostly due to the fats found in olive oil: 10 grams of monounsaturated and 1.5 grams of polyunsaturated) Ingredients
  • Broccoli florets (I used about 2-3 stalks-this can feed about 2-3 people but you can make as much or as little as you would like!)
  • 1 tbsp olive oil
  • Dash of lemon pepper
  • Dash of salt
  • Dash of pepper
  • 1 tsp chopped garlic
  • 3 Tablespoons grated Parmesan & Romano cheese 
Instructions
  1. Preheat oven to 425 degrees
  2. Cut up broccoli and throw in mixing bowl
  3. Add olive oil, salt, lemon pepper, garlic, and pepper to mixing bowl
  4. Toss mixture until broccoli is well coated
  5. In a single layer, add broccoli to either a greased baking sheet with olive oil cooking spray or you can line baking sheet with parchment paper
  6. Bake for 16 minutes or until slightly browned
  7. Once broccoli is done, remove from oven. Add extra pepper and sprinkle parmesan on top
