Guys... the most amazing thing happen.... my niece was born on Monday!!! I will confess, when Ryan told me that she had cooked long enough and could come out at that point healthy, everyday I was hoping for her to make her debut and she didn't disappoint!!! I was actually in the kitchen on Monday afternoon, right in the middle of recipe development (think gummy processed dates EVERYWHERE) when my sister called needing me to come over and watch Michael so she could go to the hospital to 'check on the baby.' She was adamant that it was probably nothing but I already knew that little baby girl was done cooking!!! Man are we so in love! The night she came out her eyes opened and she is super active, moving around, kicking her legs, using her arms and makes the sassiest faces!! I can't wait to see her personality fully development I think we might have a little diva on our hands!! She already seems so at home and content but I am not surprised my sister is one of the best moms in the world! Here is my niece Caroline Kaye Reynolds.... My DLSR camera isn't only for food photos :) Can't get enough of this baby! Now back to that recipe I was cooking up on Monday! The team at Blue Diamond sent me over a bag of their dark chocolate almonds to try. These almonds are perfect to eat for a snack on their own or chopped up and thrown into a dessert but I want to get super creative with this challenge and the results didn't disappoint!! When my mother-in-law tried it the first thing out of her mouth was it tasted like an almond joy! How can you not love that?! This recipe was pretty simple to make and doesn't require any baking! I made the 'date' paste a few days before (thanks to Caroline) I actually finished the recipe and it was still good to go so you can always make certain things ahead of time and use when they are needed!! I love the idea of giving these away as healthy gifts for the holidays or parties or just having them on hand so when a sweet tooth comes to haunt you these guys can help you make a healthier alternative to a box of cookies/candy!!!

I just love dark chocolate almonds!!! First step is to process or chop the dark chocolate almonds and set them aside in a bowl. Then we process the dates with a little bite of water. If needed you can stick the date paste in the fridge after to harden it up a bit. Then add all the remaining ingredients (besides the melted dark chocolate) and stir until well combine!! Honestly, this stuffing was soo amazing I could have just eaten it by itself but the dark chocolate outside was needed to hold everything together! unhealthy delicious they tasted!!! Just like the real deal! I love the idea of these imperfect looking clusters!! Messing chocolate makes my inner child overly excited!! Minnie just couldn't understand why pups can't eat dark chocolate and was relentlessly mean muggin me from across the room. Sorry 'bout cha! Like I said, perfect to serve during an event or the Holidays! Everyone will thank you that they taste so amazing and yet are still healthy with simple ingredients!!!
