If you follow me on Instagram then you got a sneak peak yesterday for these awesome black bean brownies (that are to die for)! 99.9% of the time my philosophy on 'healthy' desserts is just eat the real thing, enjoy it and move on with your life but that tiny 0.01% is committed to finding a way to make desserts the new kale!! The benefits to having a few healthy dessert recipes up your sleeve is sometimes you are having people over and you want to have a great menu but that doesn't always mean healthy, with things like these black bean cupcakes and my coconut bites, you can still serve food that you know everyone is going to love without throwing your hard work on your lifestyle down the drain. I also, love to make these when I am craving something sweet but trying to stick to my goals, extra points because these guys are small bite sized so you can have one or two and move on with your day! They would also be perfect if you are a mid-afternoon sweet tooth person to have one or two of these on hand with maybe a tablespoon of almond/peanut butter (for added protein/healthy fats) to avoid running to the corner store and picking up something you will regret! If I haven't already convinced you that these are a must try, yesterday when Ryan got home from work he could smell the brownies baking and was so excited I made brownies. I never told him they were suppose to be healthy because I wanted to see what he was going to say.... HE NEVER KNEW THE DIFFERENCE!! I had to tell him (after his fifth one) that they were actually made with black beans. The look on his face was priceless, it is great to know after 12 years of being together I can still keep him on his toes. Now on to those brownies bites that remind me of the ones my mom used to buy at Sam's Club (yes, you know the ones)!
I ended up taking over 100 photos during the brownie making process.... this might seem a little overkill to some non-bloggers but the love is deep when you finally make the perfect recipe :)
Honestly, I was a little unsure at first when I was researching the black bean brownie recipes on pinterest. A lot of them seem to be pretty complicated and contained weird ingredients so there was ALOT of recipe editing and these babies took me two tries to get right! The first try they tasted strongly of coconut and I couldn't get them to stay together- there were crumbs EVERYWHERE! I added an extra egg, some coffee grounds and baking powder and removed some of the coconut oil... BINGO!!!
Once the brownies come out of the oven you have to let them cool a bit so they don't fall apart (I got a little too excited a 2 of mine spilt)! Just wait maybe 10 minutes to let them cool and then get them out .... patience! :) Can you believe this is what you can do with a can of black beans!?! #MINDBLOWN
