Broccoli Crunch Salad!

This is one of my favorite side dishes because it goes with almost every meal. The only downside is that most broccoli crunch salads contain tons of high calorie ingredients like ramen noodles, bacon and too much mayo. So, after deciding on all the ingredients I wanted to use, I threw everything in a bowl, including the homemade mayonnaise and the results were incredible....great crunch, great taste, great everything! Instead of feeling bloated and tired after eating greasy hamburgers and chips this Memorial Day weekend, make these healthy turkey burgers and broccoli crunch salad! Your body will thank you!

Broccoli Crunch Salad
Serves 10
Prep Time: 15 min 
  1. 1 head broccoli, chopped
  2. 1/2 cup homemade mayonnaise
  3. 1/4 red onion, diced
  4. 3 strips cooked Canadian bacon
  5. 1/4 cup slivered almonds
  6. 1 tbsp chia seeds
  7. Salt and pepper
  8. 1 apple, chopped into small pieces
  1. Heat medium skillet on medium-high heat
  2. Add Canadian bacon to a skillet and cook until crispy
  3. Wash and cut up broccoli into small pieces
  4. Add broccoli, chopped onion, almonds, chia seeds, homemade mayonnaise, apple, salt and pepper and Canadian bacon to a large mixing bowl, combine till well mixed
