Bruschetta Chicken

I am a true believer that every life has seasons, seasons to be completely involved with your career, seasons to be completely focused on family/relationships and seasons to really kick some ass and focus on yourself and your personal goals! For example: if you have 2 jobs, go to school at night and are a care taker for a loved one, odds are now is NOT your time to be overly focused on entering a bodybuilding contest. Or if you have a new job/starting your own company that requires so much from you mentally, physically and emotionally, to the point where you are traveling and pulling all-nighters odds are you probably shouldn’t try two-a-day works and go on a low carbohydrate diet. Don’t get me wrong, being physically fit and making healthy eating habits are ALWAYS something that should be apart of your life but it doesn’t always have to be your number one priority. To be honest the past few years I have embraced all the imperfections my body has handed to me. How could I preach about self-love and empowering women if I myself couldn’t get over the little bit of cellulite on my own ass? But this year feels different for me personally, yes I love myself and my body regardless of what my scale says but I am currently craving to see just how great of shape I can get into! (am I alone in this or is someone else focusing on this too?!) The last time I felt like I was giving the gym 100% of my effort was when I got married 2.5 years ago and since then I have maintained my same weight but my body is much softer and not nearly as physically fit as I used to be. So I have decided to commit to a much more disciplined lifestyle, cutting back on the ‘extra treats’, getting rid of some unnecessary carbohydrates, decreasing my alcohol intake and stepping my gym routine up a notch. I will also be doing a weekly post on Friday's about how the week went, what I ate and what I did for workouts. I am currently obsessed with anything Equinox has to offer and love going to the barefoot conditioning class, barre class and spin class but I am going to be adding in 2 days of weights so I will keep you posted on what exercises I am doing! Now for today’s recipe I am sharing with you a SUPER simple chicken dish that you can make anytime of the week with very little effort! I always have to dress chicken up with something or I get bored and this bruschetta is amazing! You can also save the leftovers and put them on top of a salad! 

Bruschetta Chicken
Serves 4
Prep Time: 10 min 
Cook Time: 25 min 
Ingredients:
  • 1 pound of boneless, skinless chicken breast
  • 2 pounds of fresh roma tomatoes, chopped
  • 5 leaves of fresh basil, sliced into small long strips
  • 1 tablespoon balsamic vinaigrette
  • 1/2 tablespoon of EVOO
  • 2 cloves of garlic, minced
  • s/p to taste
Optional
  • Italian seasoning to taste
Instructions
  1. Preheat your oven to 400 degrees and line a baking dish with foil, add in the chicken breasts and bake for 20-25 minutes until done. While the chicken is cooking, chop up the basil, garlic and tomatoes, add all ingredients into a bowl and mix until well combine and let set until the chicken is done cooking. Remove the chicken form the oven, plate and top with as much bruschetta mixture as you would like, serve hot and enjoy!!!

3.6.16_BP_01 Wash, slice and de-seed the tomatoes.

Chop up as much fresh basil as your little heart wants!! Basil and rosemary are my two favorite herbs so I got a little carried away :) 

3.6.16_BP_43 Everything into a bowl while the chicken is cooking and mix together so the flavors and marinate. 

3.6.16_BP_46 I like my bruschetta a little bit more chunky but feel free to chop yours as finely as you would like. 

3.6.16_BP_48 Is there such a thing as a basil scented candle? If not someone needs to get on that ASAP! 

3.6.16_BP_55 If needed you can always add more balsamic vinaigrette before serving! 

3.6.16_BP_58  So perfect! I am going to eat mine with a homemade salad but Ryan put his over some pasta and he loved it! Find ways to make the same meal work for everyone in your family. We always eat the same main dish and then then we pick different sides. Ryan is forever trying to gain weight and I am forever trying to not find the weight he loses!!!
