Buffalo Chicken Lettuce Cups

These buffalo chicken lettuce cups are perfect for a healthy appetizer or lunch! This recipe is the perfect alternative for when you craving buffalo wings! With only 79 calories per lettuce cup, you'll be glad you skipped the greasy wing shop! 
Buffalo Chicken Lettuce Cups
Serves 4
Prep Time: 5 min 
Cook Time: 20 min 
  1. 4 butter lettuce cups, rinsed and pat dry
  2. 2 boneless, skinless chicken breast
  3. 2 carrots, julienned
  4. 2 stalks celery, diced
  5. 2 cloves garlic
  6. Dash of Salt
  7. Dash of Pepper
  8. Approximately 2-3 tablespoons of Franks red hot sauce or Tabasco sauce (any kind of hot sauce will work). Add more hot sauce if you like it very spicy
  1. Preheat oven to 400 degrees and chop chicken into small cubes
  2. Add chicken, salt, pepper, garlic to a bowl and mix well
  3. Add chicken mixture to a baking dish and bake for ~ 20 minutes or until completely cooked
  4. While chicken is cooking, cut up the carrots and celery
  5. Once chicken is done cooking, place chicken in a large mixing bowl, add wing sauce, carrots, celery and mix well
  6. Scoop about 1/4 cup of mixture and add to lettuce cup, continue to do this until all lettuce cups are used or you can make one serving and save the rest for later!

The ingredients!! IMG_1714 Cut the chicken into small cubes or you can purchase fajita chicken to make it easier on yourself! Combine the ingredients to make the sauce and cover the chicken with it! Stick the chicken in the oven and while you are waiting chop up the vegetables! IMG_1735 Place cooked chicken onto lettuce wraps and top with carrots! Enjoy! One of my favorite easy to-go dinners!!
