People... this is what healthy dreams are made of! Cauliflower mashed potatoes are just another reason why staying on track can be easy with a little creativity in the kitchen! After a long day sometimes I just want to dive into a large bowl of potatoes but this dish will satisfy your carb craving and not set you back a whole days worth of exercise. Feel free to indulge in my creamy 'potatoes'.
Raw cauliflower- a large head
5 large cloves of garlic or 2 1/2 tsp chopped garlic
2 tablespoon of butter
Pinch of ground nutmeg
Pepper to taste
Cooking instructions: 1. Fill up a large 6-quart pot with an inch or 2 of water. 2. Place a vegetable steamer into the pot. Cover with a lid and set heat on high. 3. While waiting for the water to boil, wash the cauliflower. Cut up the cauliflower into small pieces. 4. Once water is at a boil, throw in all the cauliflower, garlic and a pinch of salt. Steam everything until soft (about 10 minutes) 5. Drain everything into a colander and dump into a food processor. Season with pepper, nutmeg and butter. Process everything until smooth.
