Crockpot Cinnamon Apples
- 5 red apples cut into slices
- 1/4 cup of maple syrup, grade B
- 2 tablespoons of cinnamon
- 1/2 tablespoon of nutmeg
- Add all ingredients into a crockpot, stir until well combine. Then cover and cook on low heat for 2-3 hours until the apples are tender!
- You can always add more cinnamon, nutmeg or even add in a bit of pumpkin pie spice- you really can't mess this recipe up!
This was just before turning on the crockpot... I can't even began to explain how great this recipe made my kitchen smell! The sun was going down so I changed it up and took the photo shoot outside on my balcony. I am sure my neighbors thought I was crazy taking photos of food like the dish was a supermodel. #foodbloggerprobz Honestly, this recipe is one of the reasons it sometimes blows my mind that everyone doesn't try to eat healthier. I don't say that to offend anyone I just hear the excuse all the time that people don't have the time to be healthy, it took me 5 minutes to prep this recipe and I left it in the crockpot for 3 hours to cook.. ON IT'S OWN!!! Healthy recipes and healthy cooking doesn't have to be time consuming or complicated BUT it does take some habit breaking, learning, and trial and error!! I always compare eating healthy to starting a new job, the first few weeks you are overwhelmed and you don't know anything but a few months into it you can train and teach others your ways!! Being healthy is the same way, yes there is an initial learning curve but once you get past it you will wonder why you never did it before!!! At the risk of sounding like a thanksgiving scrooge I must admit that thanksgiving isn’t my most favorite holiday, it almost feels like the opening act for the real showstopper holiday… CHRISTMAS!! Don’t get me wrong I have a lot to be thankful for and I love getting to spend so much time with my family but thanksgiving is lacking that Christmas spirit!! Ryan and I were more than ready for Christmas this year and the day after thanksgiving we (I) started decorating right away! This probably has to do with the fact that last year we majorly dropped the ball on creating Christmas. We put up our tree (a pre-lit one) but we didn’t get out any decorations or ornaments (yikes)! We spent November, December and January traveling for Ryan’s residency interviews which was a blessing that he received so many and we were able to experience Christmas in so many different cities (especially ones like Minnesota which we would have never gone to if it wasn’t for the interview). But by the time we came home it was just to sleep, eat, check in with our families and we spent every.single.night. discussing and dissecting every single detail of the interviews. Who did we meet? Who did we like, was the town fun? What are the hours like? What did they ask you in the interview? How did you answer? Did he like you? Was he laughing? Is it a good program? How much vacation time do we get off? What are the other doctors like? What are the other wives like? How close is the nearest airport? Are flights generally cheap to get home? How is the housing market? Ok so you get the idea and needless to say Christmas came and went and sadly, we were both grateful it passed by without much effort. This year is a completely different story! We are both happy and settled into our hometown of Houston (side note: I always thought I would be a world traveler living out of a backpack but God had other plans for my life… thankfully) and Christmas this year will be fully enjoyed by the both of us, even if Ryan is spending Christmas day at the hospital! So later on this week I will be sharing my Christmas decorations and some fun little DIY’s that I did with normal everyday decorations that you can keep and use all year long because I kinda hate putting everything in boxes for 10-11 months out of the year! Now we are moving on to this HEALTHY and simple winter dessert (or snack) that is meant to be enjoyed all year around! It is super easy to make and the flavor is out of this world! I can’t wait to have kids someday, this recipe is one that makes you think, ‘how cute would it be if the kids and Ryan were decorating (with Polar Express playing in the background) the tree and I had this dessert simmering in a crockpot?” Yes I really just typed that and don’t try to act like those thoughts haven’t popped into your own head and one point in time- baby fever gets the best of us all!! You have waited long enough through my ranting and I give you Guilt-Free Cinnamon Crockpot Apples!
