Cucumber and Dill Salad

The perfect summertime salad! Cool, crisp, fresh and delicious are just a few words to describe this salad. I love this salad because it goes with any entree, makes a ton so you can eat it all week long and it's very low in calories and carbs! Makes 10 servings! Nutrition information: total: 48.4 calories, 2.3 grams fat, 5.6 grams carbohydrate, 0.9 grams fiber, 2 grams protein Ingredients:
  • 2 cucumbers, chopped
  • 2 tomatoes, chopped
  • 2 tbsp feta
  • Dash Salt
  • Dash Pepper
  • 1 tbsp red wine vinegar
  • Juice from 1/2 lemon
  • 3 cloves garlic
  • 1/2 bunch fresh dill, finely chopped
  • 3/4 red onion, chopped
  • 1 tsp sugar
  • 1 tbsp olive oil

Instructions: 1. Chop cucumbers, tomatoes, red onion and dill. Add to a large mixing bowl 

2. Mix in the rest of the ingredients in the large mixing bold and stir until well combined
