Easy Egg Muffins

Are your mornings super crazy…snoozing till the very last second? Rushing out the door without even thinking about breakfast? I am here to make your mornings a little bit easier (when it comes to breakfast). If you need something quick and easy that you can just grab and go, I have the perfect breakfast idea. They are called breakfast egg muffins. They are low carb, will keep you full till lunch and are sooo good. Make these guys on Sunday for the entire week. Ingredients:
  • 4 whole eggs
  • 5 egg whites
  • ½ cup broccoli (or spinach)
  • ½ small onion, chopped
  • ½ bell pepper, chopped
  • ¼ cup feta cheese
  • 4 Applegate turkey sausage links, chopped in small pieces (optional)
Ingredients: 1. Pre-heat oven to 350. Mix all ingredients into a bowl  2. Divide batter into a greased (Spectrum Olive Oil Spray) muffin tin. Bake for 20-25 minutes or until tops are golden brown. 3. Remove muffins and let cool IMG_2648 IMG_2680 Store in refrigerator and reheat in microwave  for about 45 seconds.
