Does anyone else feel like they are always on the hunt for the perfect salad dressing? For a moment there I was pushing ten bottles of dressing in the fridge and most of them had been opened, tried once and wasted…. if I don’t like the dressing, I end up feeling guilty about throwing them away so they sit there until they expire and then I have a reason to get rid of them (does anyone else have this logic, lol). That was until about a few months ago when I started making my own salad dressing and you will never believe how cheap, easy and tasty it is to make! The best part about it is you can just make a small amount so you have fresh dressing every night or you can make a batch ahead of time and use in for a few weeks! The other thing I love about making my own dressing is that if I am not loving the taste I can add more olive oil, balsamic or honey mustard to change up the taste. Ryan DOES NOT like mustard but you can't even tell the mustard is in this recipe, Ryan asked me last night what was the sweet flavor (a lot of times people will put honey in their dressing) but I just said, ‘my love’ and moved on… if he knew he was eating mustard it would not be good so what he doesn’t know won’t hurt him :) now on to that dressing recipe!!!
- 1/4 cup extra virgin olive oil
- 1/4 cup balsamic vinegar
- 1-2 cloves of garlic, minced
- 1 teaspoon of honey mustard (more or less depending on taste preferences)
- salt & pepper to taste
- In a measuring cup add in the olive oil, balsamic, minced garlic, mustard and salt and pepper- with a whisk mix well and once thoroughly combine pour desired amount over your salad. Place leftover dressing in an airtight container and place in the fridge.
