Featured Blogger Recipe: Broccoli & Cheddar Quinoa Bites!

I absolutely love anything 'bite-sized'! (How can you not)!?

Bite-sized cupcakes?! Heck yes!

Bite-sized brownies?! Two please!

And now bite-sized HEALTHY quinoa broccoli and cheddar bites, my inner child is over the moon happy!! I found this recipe because one of my very good friends who is a personal trainer (more on her later) sent me the recipe from pinterest for the broccoli cheddar quinoa bites and usually when I first look at a recipe I find a few things I would like to change to make it my own but I didn’t want to change anything about this amazing recipe!! This is the perfect recipe for after school snacks for kids, a potluck dinner or to put out at appetizers for a party! Also, they are so small that that you could have 1, 2 or 3 of them and not throw yourself over the limit for your calorie needs! Big thank you to Alida’s Kitchen for creating this amazing recipe! 

Broccoli Cheddar Quinoa Bites
Serves 36
Prep Time: 25 min 
Cook Time: 20 min 
Ingredients
  1. 3/4 cup of uncooked quinoa, rinsed
  2. 1.5 cup of water (or chicken broth)
  3. 2 eggs
  4. 2 cups of broccoli florets, finely diced
  5. 1 cup yellow onions, finely diced (I used a whole small yellow onion)
  6. 1 clove of garlic, minced
  7. 1.5 cups of shredded cheddar cheese
  8. 1/2 teaspoon of paprika (optional)
Instructions
  1. In a medium sauce pan cook the quinoa in water or chicken broth per the directions on the package (takes about 15 minutes to boil) then set aside to cool. Pre-heat the oven to 350 degrees. While the quinoa is cooking/cooling chop up your vegetables and add all the ingredients into a large mixing bowl. Then add in the quinoa and mix until well combine. Then use cooking spray to coat a mini muffin tin and scoop the mixture into the tin. I 'packed' as much of the mixture as I could into mine and they turned out perfect! Into the oven the bites go for 15-25 minutes depending on your oven.

 This is what is looks like when are the ingredients are mixed and ready to be put into then muffin tin! Instead of making 3/4 cup of quinoa I went ahead and made a whole cup because I didn't want to waste the little bit that would be left in the bag so I just increased the rest of the ingredients and probably used closer to 2.5 cups of chopped broccoli to increase the healthy aspect of this recipe. I also used about 1- 1/4 cup of cheese instead of 1.5 cups and 2 whole eggs and 1 egg white since I increased the amount of ingredients! As my grandma always told me, 'never follow a recipe in its entirety, every time you make a recipe add a little something extra of your own'. That quote really helped me when I first started getting into cooking and wanted to start a blog because I was so scared of creating a recipe and messing up but once I started following her advice I realize it is almost HARD to mess up any recipe!!! IMG_1632 Just like Alida, I put a heaping amount of mixture into the mini-muffin tins and I am so glad I did!! The other difference I attempted was the first go around took my muffins 25-30 minutes to get golden brown on top so I bumped the heat up to 400 and they cooked perfectly in 15 minutes! Don't be afraid to adjust the temperatures and cooking times of recipes, everyones ovens and stoves are so different (unfortunately) if you feel like something its cooking like it should BUMP UP THAT HEAT, BABY!!IMG_1662 Seriously, this is the cutest recipe ever! Hi Marla. I cannot wait to try this recipe. I have been bringing some of my homemade quiche to work for an afternoon snack. It is delicious, but heavy on the cream. These little bites are a perfect and healthy option for my afternoon snack and I usually have all the ingredients in my pantry. I will let you know. Thanks!
