Guilt Free Chicken Fingers!

I am in love! This chicken finger recipe will curb any unhealthy cravings you've had lately! The best part is these chicken fingers are low-carb, full of protein and so good they just can't be real.... But oh my friends, they are, and I am very happy about that :) Makes 4 Servings Nutrition facts per serving: 24.3 grams of protein, 225 calories, 11.75 grams of fat, 6.5 grams of carbohydrates, 2.1 grams of fiber Ingredients
  •  1 lb boneless, skinless chicken breasts
  •  1/2 cup almond meal
  •  1 tbsp paprika
  •   ½ tsp garlic powder
  •   1 tsp cumin
  •   Dash of onion powder
  •   1 tsp creole seasoning
  •   Dash of  black pepper
  •   Dash of  sea salt
  •   2 eggs, lightly beaten
  1. Preheat oven to 375
  2. Slice chicken breasts into long strips, 1-2″ wide (I bought thin pre-sliced chicken to save time)
  3. Mix together almond meal, paprika, garlic, onion powder, creole seasoning, pepper, cumin and salt
  4. In a separate small bowl, lightly beat 2 eggs
  5. Dip each piece of chicken in egg and then coat with almond spice mixture. Repeat this step until all chicken pieces have been coated
  6. Place on a cookie sheet with aluminum foil or you can  use cooking spray to grease pan
  7. Bake for 20-25 minutes or less depending on the thickness of the sliced chicken (mine only baked for 18 minutes since they were very thinly sliced)
