Healthy Breakfast Casserole!

The egg muffin recipe was such a big hit that I wanted to try a breakfast casserole to see if it would be just as good! Wow! This dish is so tasty and is perfect to make for your whole family or even keep it all for yourself. This breakfast casserole makes about 8 servings, so it will be a quick and easy breakfast that will last all week. This dish is full of protein and veggies, so forget about dealing with mid morning hunger...it will keep you energized and full till lunch! Per serving (8 servings total): 136.3 calories, 7 grams of fat, 7.2 grams of carbohydrate, 2.5 grams fiber, 14.3 grams of protein Ingredients:
  • 1 Applegate chicken sausage
  • 1 medium sized head of broccoli chopped
  • 2 handfuls of spinach shredded
  • 1/2 small red onion, chopped
  • 3 slices turkey bacon chopped (or Canadian bacon)
  • 4 egg whites
  • 5 eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup unsweetened almond milk
Directions: 1. Preheat oven 350 degrees 2. Combine all ingredients in medium sized mixing bowl except for the cheese, mix well   3. Spray an 8x8 baking dish with olive oil spray 4.
