Healthy Chicken Fajita Crockpot! March 16 2015, 2 Comments


I love supporting small/local business owners over bigger corporations ANY day and recently while I was at the rodeo with my sister, we found a seasonings and salsa booth that I just had to stop at (I am consistently purchasing seasonings trying to find one that Ryan and I both like – it has become my life’s mission). I was originally just going to buy one but after smelling them all I just couldn’t pick…. So I got four and my sister bought three!! I am over the moon impressed with these flavors! Ryan and I are using them on everything and we haven’t found one that we don’t enjoy! This companies name is Van Roehling Rubs & Seasonings, they are a husband/wife team, you can tell they just love what they do and just about the nicest people you will ever meet! The four spices I purchased are the: Campfire Dust (even the name is perfection), Sweet Piggy Pork Rub (I use this on chicken too though), Sizzlin’ Oak Steak Rub (Ryan likes a spicy steak rub and I normally want just salt/pepper and we both love this), and the OMGGarlic Seasoning (perfect on literally everything). They also have a saltless and phosphate free seasoning if you need to watch your sodium intake. Ryan and I don’t use a lot of salt when cooking and don’t eat out that often, so our salt intake is not something we are overly worried about in our seasonings at this point. Anyways, todays chicken fajita recipe features the amazing Campfire Dust Seasonings, if you love trying new flavors this company is definitely for you!!! 

Crockpot Fajita Chicken & Vegetables
Serves 4
Prep Time: 5 min 
Cook Time: 3 hr 
Ingredients
  1. 1 pound boneless skinless chicken breast
  2. 1 cup of water
  3. 1 red bell pepper
  4. 1 green bell pepper
  5. 1 orange bell pepper
  6. 1 yellow bell pepper
  7. 1/2 a large onion
  8. Seasonings of your choice**
Instructions
  1. add everything to the crockpot and set on low for 3-4 hours, then serve and enjoy!!

  1. **I used the Van Roehling Campfire Dust Seasoning
