Healthy Chicken Salad Lettuce Wraps! March 03 2014, 2 Comments

Chicken salad is just one of those perfect comfort foods that I can't seem to stay away from but the average chicken salad is filled with mayonnaise and calories that aren't very healthy. My chicken salad recipe has all the flavor minus the guilt and will keep you full thanks to all the protein! Recipe makes 4 servings Nutrition facts per serving: 247.7 calories, 42.7 grams of protein, 9.3 grams of carbohydrates, 1.8 grams of fiber and 4.3 grams of fat Ingredients:
  • 1 pound chicken breast (cooked) or rotisserie chicken without skin (this will save you about 15 minutes)
  • Dash of salt & pepper to taste
  • 2 celery stalks chopped
  • 1 cup Greek yogurt
  • 1 cup red grapes, cut in halves
  • 1/2 tsp of onion powder
  • Long romaine lettuce leaves
Instructions: 1. Boil chicken in water for about 15 minutes or until fully cooked (no pink) or add pre-made rotisserie chicken and cut up into small pieces 2. Place chicken in a food processor or place in a bowl and use a hand held mixer. Blend until chopped/shredded 3. Add the rest of the ingredients and blend until all ingredients are mixed well   4. Add a tomato slice and a scoop of chicken salad to the romaine lettuce leaf or any other toppings you would like: mustard, pickles, walnuts or a honey mustard dressing.
