Healthy Chocolate Chip Cookie Bites!

I need a food detox and not the extreme kind but just something to ‘reset’ my lifestyle! We have vacationed, moved in with our in-laws, and now in the process of house hunting! Everyday just goes by so fast and even though I try to make the healthiest choices sometimes my best efforts fall short due to being unorganized and being surrounded by foods that usually aren’t apart of my everyday diet like girl scout cookies (who can resist those) and wine at dinner time (I love wine but every night drinking isn’t my thing). Monday was the day I hit the reset button to better monitor my eating habits (no more random cookies) and cut out the excuses!!! But we all know the first two weeks of cleaning up your diet can make you feel tons of emotions from ‘did I just get hit by a train?” to “I have so much energy!” I am currently in the first part…. The train lol. So instead of completely depriving myself (because that’s just not how we do things here at The Blonde Pantry), I have created a healthy substitute for when the cookie craving is just more than I feel like dealing with! This healthy peanut butter chocolate chip cookie bite recipe is just what I need to get me over that two week hump!!! So now I can have my healthy grilled chicken salad for lunch and when that annoying sweet tooth tries to mess with me after, I eat one of these to shut that thing up!!! As I always say, ‘work smarter not harder’!! Depriving yourself NEVER works and most of the time ends up in weight gain! Don’t look for the quick fix look for the long term results because this is all about living a healthy lifestyle!!! Now here is that recipe that you are going to be thanking me for!!! 

Healthy Chocolate Chip Cookie Bites
Serves 12
Prep Time

Ingredients
  1. 3/4 cup of cashews
  2. 1 tablespoons + 1 teaspoon of natural creamy peanut butter
  3. 1.5 tablespoons of maple syrup
  4. 1/2 teaspoon of vanilla extract
  5. 1/4 cup dark chocolate chips
Instructions
  1. Process the cashews, vanilla extract and 1 tablespoon of maple syrup until the consistency of chopped nuts and then add in the peanut butter and the rest of the maple syrup. Process longer until completely combine and is the consistency of thick peanut butter (see photo). Then in a small mixing bowl add in the dark chocolate chips and mix well! Using your hands form small balls with the 'dough' and place in the fridge to harden for 5-10 minutes before eating!!
