Healthy Cinnamon & Spiced Nuts

After all the traveling I have been doing lately, it can get tough to resist all of the food temptations that the airports and restaurants provide. While I do believe in splurging a little when you are on vacation, it is important to pick and choose when you are going to indulgent wisely and the airport's free peanuts and cookies on the plane will NOT be what I am going to indulge on! This past trip to Boston I packed tons of healthy snacks for the plane, just like I always do, but I wanted to take my snacking game up a notch with a treat that isn't only healthy but will also satisfy my sweet tooth!  So meet your new favorite healthy snack: Cinnamon & Spiced Nuts!!!  

Healthy Cinnamon & Spiced Nuts
Serves 8
Prep Time: 5 min 
Cook Time: 10 min 
Ingredients
  • 1 cup of almonds, raw
  • 1 cup of pecans, raw
  • 1 tablespoon of coconut oil
  • 1 teaspoon of cinnamon
  • 1 teaspoon of maple syrup, grade B
  • 1/4 teaspoon of pumpkin pie spice
  • 1/4 teaspoon of nutmeg
  • 1/4 teaspoon of vanilla
  • 1/4 teaspoon sea salt or to taste
Instructions
  1. Preheat the oven to 325 degrees and place the pan inside the oven to heat up. While your pan is heating up, melt the tablespoon of coconut oil in the microwave until melted, about 15-20 seconds. Then, in a bowl, add in the nuts, melted coconut oil, and all seasonings besides the sea salt, combine until well mixed!
  2. Once the oven is preheated, remove the hot pan and spread out the nuts evenly and place back into the oven for 5 minutes. After 5 minutes, flip or if your baking pan has sides you can slightly 'shake' the pan to mix up the nuts, place back into the oven for another 3-5 minutes. Let the nuts cool on the pan for 5 -10 minutes and enjoy!!

You know what is going into the food you are eating and don't have to be deceived by false marketing claims! IMG_9333 Not to mention, making your own meals and snacks saves a lot of money!! IMG_9348My husband and I both agreed that these tasted amazing and I can't wait to pack them for when we head off to Michigan on Wednesday!!!
