When I think summer, beaches, margaritas and umbrellas I can’t help but to think about seafood!! Whenever we vacation to a beach I find it pretty easy to make healthy choices and not blow my lifestyle because lean, healthy, delicious seafood surrounds me everywhere I look! Fish tacos for lunch?! YES, PLEASE! Grilled scallops and red snapper for dinner?! DONE! I actually find the island way of life supports my healthy habits as well as my bikini, but were we can easily get into trouble is heavy appetizers, greasy burgers and sugary drinks- ekk!! Since the other day's post was all about healthy alternatives to sugar bomb drinks I am giving you simple and amazing appetizer to go with that skinny strawberry margarita! Ceviche!!! This is one of my all time favorite appetizers full of vegetables, fruits and seafood- what's not to love?!
