Happy Friday!!! This week has been super packed with clients, to-do lists and more to-do lists! Ryan submitted his residency list as well, we are sooo relieved to have that process out of the way and now we just have to wait about a month to find out where he has been accepted, the waiting is the hardest part!! Now back to your regularly scheduled program :)  More and more I find it very hard to find REAL ingredient marinara sauce, pesto sauce and salad dressings from the grocery store and while your best bet is to always go organic that doesn’t mean you still aren’t eating bad fats and sugar…. Take organic cookies for example just because they are organic doesn’t always mean a product is healthy at the end of the day you are still eating a cookie! While I do think there are some great brands out there nothing is better from making sauces homemade! Today I am sharing this super simple homemade marinara sauce with only a handful of ingredients, the great thing about this recipe (and for most of my recipes) you can add more less of different flavors depending on your taste preference! When I eat marinara I want to be able to taste all of the flavor and seasonings so I added everything to mine but if you like a more simple taste you can always just add one or two ingredients, taste test and add more based off of your palate. Ryan loved this recipe and when he tried it there wasn’t any hesitation in his response… ‘Man that’s good” …. My thoughts exactly!! So now on to todays recipe! Tomato Basil Marinara

Healthy Tomato Basil Marinara: 
Serves 8
Prep Time: 10 min 
Cook Time: 25 min 
  1. 2 teaspoons extra virgin olive oil
  2. 1 clove of garlic, finely chopped
  3. 1 shallot, large and finely chopped
  4. 28 oz can of organic crushed tomatoes
  5. 2 basil leaves, fresh chopped
Optional Seasonings
  1. 1 bay leaf
  2. 1/2 teaspoon dried parsley
  3. 1 teaspoon dried oregano
  4. Salt and pepper to taste
  1. In a sauce pan on medium-high heat, heat up the 2 teaspoons of olive oil and add in the shallot and garlic, sauté until softened then add in the tomatoes, basil and seasonings, cover and simmer for 25 minutes remove from heat and let cool. I wanted my sauce a little more smooth so I processed everything for about 5 seconds and serve!
