Italian One Skillet Stir-Fry

There is nothing better than a new spin on an old favorite, chicken & vegetables Italian style!! While there is nothing better than homemade pesto or marinara sauce, the pre-made organic brands at the grocery store will save you time cooking & cleaning up and we all know the easier it is to live a healthy lifestyle the more likely we are going to stick to it!! Todays’ recipe is for the fancy ‘busy-girl’ who is craving her Italian food!!! 

Italian one skillet stir fry
Serves 4
Prep Time: 5 min 
Cook Time: 15 min 
Ingredients
  • 1 tablespoon of extra virgin olive oil
  • 1 pound of boneless skinless chicken breast, cubed into 1inch squares
  • 1/2 pound of asparagus
  • 1/2 cup of cherry tomatoes, halved
  • 1 tablespoon of pesto, organic
  • 1 teaspoon oregano
  • Salt & Pepper to taste
Instructions
  1. Heat olive oil over medium to high heat. Marinate chicken in the pesto and oregano seasoning while the skillet is heating up. Place chicken into the skillet and cook until browned on both sides. Then add in the asparagus and cherry tomatoes, cover and cook for 5-10 minutes or until chicken is throughly cooked. Plate chicken and vegetables and serve!

I was thinking.. surely it takes more than 10 minutes. But, after just 10 minutes everything was cooked perfectly and tasted delicious.

I agree with Ryan, it’s quick and delicious!
