Mint Chocolate Avocado Smoothie

Happy Thursday and by this point in the week it is safe to say EVERYONE is working for the weekend and there isn’t a better way to give yourself that extra boost you need to make it to Friday at 5pm than this refreshing smoothie! Mint.Chocolate.Avocado. What else needs to be said?! I actually hated mint and chocolate together until about 3 years ago when Ryan and I moved in together and he would buy these mint chocolate ice cream bars, I never ate one until one night I was really wanting NEEDING something sweet so I broke down and ate one and it was life changing (THIS is why you don’t leave sweets in your house people, don’t follow my mistakes)! To this day my favorite flavor is mint chocolate chip and this smoothie just hit another home run for my favorite combo! Now on to that little (life changing) recipe!  

Mint Chocolate Avocado
Serves 1
Prep Time: 5 min 
Ingredients
  • 1/2 an avocado
  • 1 cup of almond milk (or coconut milk)
  • 1 cup of ice
  • 2 large handfuls of spinach
  • 1 scoop of chocolate organic whey protein powder*
  • 1/4 cup of fresh mint**
Instructions
  1. Add all the ingredients to your blender and blend away!!
Notes
  1. *I love vega but this time I used an organic brand from costco that tasted great!
  2. **You can use mint extract in a pinch!
Optional ingredients
  1. 1 tablespoon of maple syrup grade B
  2. 1 tablespoon of flaxseed coconut chocolate decadent spectrum blend!
  3. The maple syrup is completely optional but if you want it just a tad sweeter or giving this to a child then I would recommend it!

IMG_4915 Recently I purchased a few of my most used herbs, pots, and soil and created a small little garden on my kitchen window with all of my favorites (and then some) because I hate paying 4 dollars for fresh basil that dies before I can use it all! Planting my own herbs helps save money, provide fresh herbs to our foods (which tastes amazing) and not to mention smells great! 

IMG_4919 Mint is one of the herbs I have (as you can see in the photo) I purchased it originally thinking of using it in mojitos but it is perfect for fresh salads and smoothies! Other herbs I bought are basil, rosemary (my favorite), parsley, chives, oregano, cilantro, and tyme. 

IMG_4925 How beautiful is mint?!! That might sound weird to some but I love waking up in the morning and seeing that my little plants have grown! 

IMG_4926 This smoothie really is amazing and I can't get enough of it! I can't wait to bust out this baby when I am craving mint chocolate chip ice cream, this will be the perfect substitute!
