Mixed Berry Breakfast Muffins

You can never have enough easy and healthy go-to breakfast options! I know we hear it all the time about how ‘breakfast is the most important meal of the day’ and it is!!! There is tons of research to back up my statement but in reality we don’t need someone in a lab telling us what common sense will!
  1. Eating breakfast gets your metabolism going (duh)!! Just like a car, we need fuel to run! No fuel, no go!
  2. Breakfast can help you make better choices throughout the day! When you are starving I can almost always promise you, you will be thinking with your stomach and not your head, which leads to hamburgers and fries for lunch instead of that great salad you had been planning on.
  3. Eating breakfast helps with cravings! I know people who get into this vicious cycle of only eating one meal per day and they all say the same thing, “I am not hungry in the morning.” Well duh!!! You ate a whole days calories for dinner of course you aren’t hungry when you wake up! Then this pattern creates a domino effect… no breakfast= slower metabolism. Skip lunch because you are too busy and not hungry. Dinnertime= all out ‘binge’ eating. Go to bed overly stuffed. Wake up not hungry. Repeat!!

In fact most people would be shocked to know one of the biggest patterns I see with clients is skipping meals, not eating breakfast and only eating one meal per day!! I think a lot of people only eat one meal per day because they think that if I only eat one meal per day I will lose weight but a calorie is a calorie and regardless if you eat too many throughout the day or just in one sitting you will gain weight!! The difference is if you are spreading your calories evenly throughout the day this will ward off hunger, cravings, blood glucose highs/lows, and reave up your metabolism to help aid you in weight loss!! So the bottom line is eat more often = lose more weight!!! Who doesn’t like the sound of that?! Now that I have you ready to eat breakfast here is a great recipe to get your day started! 

Mixed Berry Muffins
Serves 12
Prep Time: 10 min 
Cook Time: 50 min 
  1. 1-10oz bag of organic frozen mixed berries
  2. 2 cups of rolled oats (gluten free)
  3. 2 cups of unsweetened almond milk
  4. 1/4 cup of maple syrup grade B
  5. 3 eggs
  6. 1 1/2 teaspoon of baking powder
  7. 1/2 teaspoon of cinnamon
  8. 1/2 teaspoon of sea salt
  9. 1 teaspoon of vanilla
  1. 1/2 cup of dark chocolate chips
  1. Preheat the oven to 350 degrees. In a large mixing bowl, add all the ingredients and stir until well combine. Grease a muffin tin and then scoop in about 1/4 cup of the batter into each muffin tin. Bake in the oven for 40-50 minutes or until done. Remove from the oven and let cool for 20 minutes, then enjoy!
