Mixed Berry Chiaseed Jam

Remember that awesome raspberry chiaseed jam I made a few months back?! It has become a staple in our house! I pretty much eat it everyday with a piece of Ezekiel bread, peanut butter and a sprinkle of the cocoa coconut flaxseed. This past week when I went to the grocery store to whip up another batch they only had one carton of raspberries… wait…. what?!? Needless to say, I snatched up that carton and had to come up with a substitute so I figured we would try to throw some blackberries in there and see what happens…. The answer is magic people, MAGIC! My home is once again filled with homemade chiaseed jam and all feels right in the world! Since you have a three-day weekend coming up I advise you to give this recipe and some of my other favorites a try!! Not only can you put this on toast you can also use it in overnight oats, smoothies, and on top of desserts (namely that blue bell ice cream that Texans have been losing their minds about)! Now on to that recipe….

Mixed Berry Chiaseed Jam
Serves 20
Prep Time

Ingredients
  1. 1.5 cups of blackberries (1 little pint carton)
  2. 1.5 cups of raspberries (1 little pint carton)
  3. 1/4 cup of grade B maple syrup
  4. Juice from 1/2 a lemon or orange
  5. 3 tablespoons of chiaseeds
Optional
  1. 1 teaspoon of vanilla
Instructions
  1. Add the berries, maple syrup and lemon juice to a pot and bring to a boil. Once the pot starts boiling add in the chiaseeds and reduce the heat to simmer and cover for 15-30 minutes or until the jam has thicken up to your liking. Mine took closer to 30 minutes and I continued to check every 5 minutes or so. You can also add in a splash (1 teaspoon) of vanilla when you add in the chiaseeds if you like! Once you have the thickness you desire remove from heat and transfer into a jar or bowl, let the jam cool in the fridge for a few hours or serve hot!
