Motivational Monday: Meal Prep!

One of my favorite quotes is "fail to plan, plan to fail". It is sooo true! How can you expect yourself to stay on track and eat healthy if you don't have anything healthy to eat?! I will be the first to tell you that spending a couple of hours on Sunday meal prepping can sound rather boring BUT knowing that all of your meals for the week are sitting in your kitchen ready to go?!? Now that's exciting! I am always running late in the morning and having lunch/breakfast/snacks prepared the night before gives me one less thing to worry about and makes the time in the kitchen time well spent! I invested in the salad containers from the grocery store (only a couple dollars each and I bought 5 - one for every day of the work week) and Sunday night I pack my salads: some type of lettuce, a little feta cheese (about 1-2 oz.) then the top layer I pick my vegetables: carrots, tomatoes, cucumbers, broccoli, bell peppers, onions, mushrooms, even berries, nuts, flaxseed, sprouts - the list goes on and on. You can see in the photo below my kit has a small container for my salad dressing which is great so I don't have a soggy salad and it only holds 2 tablespoons so I don't have to pre-measure. For my protein (if I didn’t have time to bake anything) I will purchase a rotisserie chicken, remove the skin and put about 4 oz (the size of your palm) into a snack-sized bag. Lunch is done!! For snacks we like to keep it simple and chose natural foods like almonds (1/4 cup), apples, pears, plums, organic turkey/beef jerky, a boiled egg or a little almond butter (to eat with an apple) are all great choices! I stay away from all the snack/protein bars <--- too many chemicals, sugar and carbohydrates and not enough of the good stuff!
