Mustard Chicken Thighs

The awesome thing about sharing your love for health and wellness is the amount of people who come out in droves to share their favorites with you! I just love when people tell me about a new awesome, tasty AND simple recipe!!! Sandra always has amazing keto friendly recipes that are easy to make and she loves to share them and I love her for it so it is a win-win all the way around! I imagine there are probably 1000’s of people who look into their fridge and think, “well I’ve got some chicken but I’m out of everything else”. But who doesn’t have mustard in their fridge?! And if your mom is anything like mine seasonings in the pantry were a must so just add a few of your favorites and there is one of the easiest (and probably the cheapest) healthy dinners you can make! Chicken breast can get so boring just eating it plain so we like to switch things up in our house and enjoy chicken thighs at least once or twice per week! Here are just a few of my favorite flavor variations:
  • Grilled on the grill outside
  • Wrap 1 piece of bacon around a chicken thigh and throw on the grill! (husband's favorite)
  • Grilled in a skillet with olive oil or coconut oil
  • Italian seasonings
  • Indian seasonings
  • Teriyaki sauce
  • Topped with marinara or pesto
  • Poultry seasonings and spices
  • Mustard chicken 
  • Baked chicken (use foil for easy clean up)
  • Baked then shredded chicken with BBQ sauce (recipe coming soon)
  • Crockpot chicken fajitas
  • Crockpot chicken soup
These are just a few of the 100’s of ways to make chicken but I won't keep you from why you came to the blog today… its time for that OVERLY EASY mustard chicken recipe!! 
Mustard Chicken Thighs
Serves 4
  • 1 pound of pasture raised chicken thighs
  • 2 tablespoons of mustard (add as much as you would like)
  • 1/2 tablespoon of smoked paprika
  • 1/2 tablespoon of garlic powder (or 2 cloves of garlic)
  • 1/2 tablespoon of onion powder
    1. If sautéing heat up the grill pan and spray a little olive oil spray or use a little bit of coconut oil to grease the pan. In a mixing bowl add all of the ingredients and mix until well combine. Once the pan is good and hot, add in the chicken and sauté on both sides for 5-7 minutes each until thoroughly cooked, plate and enjoy!
    2. Baking: preheat the oven to 400 degrees and line your baking dish with foil for easy clean up. Add all of the ingredients into a mixing bowl and mix until well combine. Add chicken into the baking dish and bake in the oven for 20-25 minutes until thoroughly cooked!

    BP_1.31_07 I love this La creuset grill pan! It gives you those perfect grill marks just like an outside grill would!! BP_1.31_10 I love mustard so this made my house smell amazing!!BP_1.31_11I think these would even be amazing if you shredded them and added them inside tortillas!! BP_1.31_14 Just one little bite!!
