Oven Roasted Rosemary Nuts

I love this time of year but the only negative thing about the holidays is you feel obligated to over indulge. Don’t get me wrong I will be one of the first in line to enjoy my holiday favorites but the hard part is all of the extra parties, events and random acts of kindness that end up not feeling so kind once you assess the damage done! I have clients tell me all the time that the holidays are the worst for them health wise and I think we need to change this! We tend to blame ‘aunt so-so’s’ cake as the reason we fell off the wagon during the holidays but I think that is because we aren’t taking ownership to our own choices! (Yes, I know I can put things bluntly but being honest with yourself isn’t always full of niceties). Instead I prefer to make healthy choices and add a little bit more physical activity leading up to the major holidays so I CAN indulge and eat what I want the day of without feeling guilty about it or like I have major damage control to do after the holidays! Yes, I hear you, the holiday season is very busy and time seems to run out but if you know you have to skip your Friday workout then add an extra 10 minutes of exercise to your workouts throughout the week to help offset that. Park farther away when you are going gift shopping, avoid the trip to Starbucks or the great American cookie company in the galleria (guilty) and plan ahead!! Planning and being prepared are the most important step to being healthy and reaching your lifestyle goals!

If I am holiday shopping and I end up getting super hungry and there aren’t any healthy options around, of course I am going to the great American cookie to pick up something I definitely don’t need. BUT if you are carrying around a healthy snack like a larabar (or the recipe I am sharing today), then being hungry and unprepared is no longer an issue! I promise you putting a larabar in your purse takes all of three seconds but with save you hours on the treadmill- how awesome is that trade off?! The other tip I love for the holidays is to offer to bring your own healthy dish! Nothing is worse than getting to a party and not having one.single.healthy.option. So do what I do! Offer to bring a healthy side like a build your own salad bar, easy appetizers (also here), healthy dessert (or here and here) or a healthier side (or here and here). Not only have I found that people tend to love healthy options at parties (the salad bar was the first thing to go last year) but now you get to have some healthier options as well!! I will admit the holidays aren’t for being over the top healthy but I also don’t think they are a free-for-all reason to be unhealthy! Remember why we are celebrating in the first place and enjoy the company of your family and the ones around you! So here is the recipe for Oven Roasted Rosemary Nuts that will take you 12 minutes (at most) to make and these are the perfect thing to top off a salad with, take as an appetizer or even wrap them up in cute packaging and give them to people as gifts! 

Oven Roasted Rosemary Nuts
Serves 4
Prep Time: 4 min 
Cook Time: 8 min 
Ingredients:
  • 1/2 cup of raw almonds
  • 1/2 cup of raw pecans
  • 1 tablespoon of coconut oil
  • 2 sprigs of fresh rosemary, chopped (or 1 tbsp of dried rosemary)
  • 2 sprigs of fresh thyme, chopped (or 1 tbsp fired thyme)
  • Sea salt to taste
Instructions
  1. Preheat the oven to 325 degrees, add foil to a baking sheet and place the baking sheet in the oven so the empty pan can heat up first. While the oven is preheating add the nuts, herbs and coconut oil. In a mixing bowl and mix until well combine. Then remove the hot pan and spread the nuts out evenly onto your baking sheet. Then place back into the oven and cook for 5 minutes, remove and flip the nuts and bake for another 3-4 minutes. Remove from the oven, sprinkle them with sea salt and let them cool! Place in your favorite serving bowl and enjoy!
