Pumpkin Protein Pancakes

by Marla Murphy April 07, 2014 2 Comments

If you like sweets in the morning this is the perfect recipe for you! This whole recipe is only 220 calories but allows you to feel indulgent. I think they are great by themselves without any toppings but feel free to try some of my favorites like: almond butter, cottage cheese, a dab of all natural syrup, cinnamon or even fresh fruits! I will take all the blame if this becomes your new favorite breakfast! Total: 219 calories, 6.95 grams of fat, 16 grams of carbohydrates, 6.5 grams of fiber, 28.7 grams of protein Ingredients:
  • 4 tbsp canned pumpkin
  • 2 egg whites
  • 1 scoop protein powder
  • 1/2 tsp pumpkin spice
  • 1 tbsp chia seed
  • 1/2 tsp agave
Instructions
  1. Mix all ingredients into large mixing bowl
  2. Spray a medium sized skillet with olive oil cooking spray and warm to medium heat
  3. Add a small scoop of pancake batter to pan and cook on each side for about 1 minute
  4. Enjoy!! Optional toppings: cinnamon, fruit preserve, cottage cheese and fruit, peanut butter, almond butter, all natural maple syrup. These pancakes are even great on their own!

Hi Dawn! I removed it for the unsightly photos but I am currently redoing them! What is your email address and I will send you the recipe in the meantime!

Marla, I can’t find your original recipe from “PSN” for the skinny banana protein pancakes. Is that on here somewhere?
