Recipe: Spaghetti Squash with Turkey!

This recipe is one of my all-time favorite dishes! Not only does it taste amazing but spaghetti squash is nutrient-dense, low calorie and low carb. I believe that this superfood doesn’t receive the recognition that it should, one whole squash has only about 124 calories, 28 grams of carbohydrates and 6 grams of fiber! This guilt-free recipe is perfect to make when you are craving pasta but don’t want to blow your whole day worth of eating :)

  • 1 spaghetti squash (makes about 4 cups cooked)
  • 1 tsp pepper
  • 1 clove garlic minced
  • 1 cup of Newmans Own organic marinara
  • 1 pound 97 % lean ground turkey
  • 2 tbps of Parmesan cheese (optional)
1. Bring a large pot of water that's big enough to cover the entire squash to a boil 2. Cut squash in half lengthwise (pretty tough to cut so make sure it's a good knife and maybe grab a strong man to help you out). 3. Once your water is boiling, carefully drop each half of squash into the water. Cook for 20 minutes.  4. While the squash is cooking: cook ground turkey on medium heat, add garlic and pepper. Once fully cooked, add marinara sauce, stir well. Continue to cook on low heat. When squash is done, remove from pot and let it cool. 6. Once it's cool enough to handle, remove the seeds with a spoon and discard (as shown in the glass bowl). With a fork, scrape the insides of the squash lengthwise (start from one end and scrape down to the other end) onto a large plate. 7. Add meat sauce 8. Sprinkle Parmesan cheese on top (optional) . ENJOY!! Makes 4 servings 1 serving: 237 calories, 12 grams of carbohydrates, 2.5 grams of fiber, and 23.7 grams of protein IMG_7537  - Love- Marla
