Sautéed Brussels Sprouts!

I was a little hesitant about cooking Brussels sprouts for the blog because, let's face it, they just don't sound that appetizing and honestly, I wasn't even sure I was going to like them. Even when I recommend them to my patients, I usually get an automatic "No" or "yuck!" I've tried them and liked them at restaurants, but cooking them at home is a whole different story. Let's just say, I was thrilled how amazing and tasty these guys were...and thank goodness they turned out so good because these little veggies are packed with so much nutrition, that you really don't want to miss out on them! If only chocolate had this much nutrition...I'd be in heaven! They have antioxidants, anti inflammatory nutrients, can help lower our risk of cardiovascular problems and so much more! Serving size: whole recipe Nutrition content: 78 calories, 4.5 grams of fat, 3 grams of protein, 8 grams of carbohydrates, 3.3 grams of fiber (I used olive oil which will increase the calories) Excellent source of vitamin c, vitamin k, folate, iron, vitamin A, calcium, zinc, manganese, vitamin b6, potassium, phosphorus and is even a good source of omega 3 fatty acids Ingredients:
  • 1 cup Brussels sprouts
  • 1 tsp Olive oil (or for lower calories use an olive oil spray!)
  • 1 tsp Garlic
  • 1 tsp fresh squeezed lemon
  • Dash of salt and pepper

Instructions: 1. Wash brussels sprouts, pat dry  2. Cut off bottoms of brussels sprouts 3. Remove leaves until you reach the sprout  5. Cut the sprouts in half  6. In a sautee pan, heat olive oil and garlic on medium heat 7. Add leaves, sprouts and salt and pepper to satue pan, mix well  8. Sauté for about 6-7 minutes, constantly stirring and turning sprouts over. Cook until slightly browned  9. Place brussels sprouts on plate and drizzle fresh squeezed lemon juice over top   P1040315P1040327 P1040338Love,
