Shredded BBQ Chicken + Rootz Sauce

This past weekend I attended the Thrive Bloggers Conference in the Woodlands and this being my first blog conference I wasn’t quiet sure what to expect or how much I would get out of it. Aside from the amazing presentations and speakers, the other attendees in the room were also extremely inspiring/encouraging and supportive!! At first it felt like the first day of high school when you have to walk in alone and know absolutely no one (I moved to a new school at the beginning of 9th grade so I know this feeling pretty well) but every group of girls that I introduced myself to, we were automatically off and running like old friends. I guess that is the great part about being in the same industry as others, there is always a common ground and an easy place to bond over ideas and goals. I came home feeling more inspired than ever! I have so much to share with my readers and awesome things I want to add to my site but it takes time to build so I will continue putting one foot in front of the other and continue to slowly and organically grow this site with all of my amazing readers along on this journey with me!

With that being said, I really want to encourage anyone who has the knowledge and passion for any industry/hobby/dream that you just can't seem to get rid of to keep going and to develop your passion into your dream. If you have a 9-5 and you really want to follow your passion but can’t due to financial reasons, start making a plan!! Start saving money, cutting expenses, sale your car/buy something cheaper, move in with a roommate, save every dime you make and on nights/weekends start building your passion! Whether it is photography, fitness, blogging, clothes, quilting, graphic design, whatever you think your talent is start taking small steps towards that. I saved money, didn’t shop and had/have a super low car payment to build my dreams off of and now and I am so glad I did that for the small time of 1-2 years because now I get to do what I love every single day and I have been able to grow this blog/company into something that can fully support me! How cool is that?! Whenever I am feeling stressed and overwhelmed about how 'big' chasing your dreams feels, I remind myself of my favorite quote. 

"Start where you are. Use what you have. Do what you can." -Arthur Ashe

Start where you are,,, So many success stories come from people who started with nothing and are living their dreams everyday! I believe that God puts dreams, goals and desires in our hearts for a reason and that is because that is what you are suppose to be/do with your life.  In fact, I am almost 100% sure that nutrition is my purpose in life. There is nothing else I feel passionate about; there is nothing else that could fit my personality better than helping others! Whatever your dream is consider this your ‘sign’ to just start putting one foot in front of the other until you get to a place were you can follow those dreams! This weekend was a reminder for me that anyone can truly be and do anything they want with a little hard work, patience and a lot of self-love. Now on to why you really came here today and not for the motivational pep talk, BBQ shredded chicken!! I think you might lose your mind when you find out how easy these babies are to make! For some reason shredded chicken tastes better to me than baked chicken. It could be because I am burnt out of the same ol’ same baked chicken after all of the years but lately I have been baking or crockpotting, shredding and then adding in my favorite flavors! I am sharing with you how to make my go-to shredded pineapple BBQ chicken ‘tacos’ (lettuce wraps)! If you have a family of hungry children and a husband like mine you can always use corn or flour tortillas to satisfy their need for carbohydrates but my husband doesn’t seem to mind eating the lettuce wraps so that is a win in my eyes! 
Pineapple BBQ Shredded Chicken
Serves 4
Prep Time: 5 min 
Cook Time: 20 min 
Ingredients:
  • 1 pound of boneless skinless chicken breast
  • 1 head of romaine lettuce cups or the butter lettuce cups
  • 1/4 cup of Rootz Pineapple BBQ sauce
  • 1/4 cup of freshly cut pineapple
  • salt/pepper to taste
Instructions
  1. Preheat the oven to 400 degrees, line a baking dish with foil and spray with a little bit of cooking oil or olive oil. Add the chicken breast into the dish and top with 1/4 cup of the Rootz BBQ sauce. Place into the oven and bake for 20-25 minutes depending on how thick the chicken is. Once thoroughly cooked remove the BBQ chicken from the oven and place into your kitchen aid mixer or a bowl with a handheld mixer (or shred with a fork) and mix the chicken until it is well shredded! If needed you can always add more of the BBQ sauce while the chicken is shredding. Then remove the chicken and spoon into the lettuce cups, top with the pineapple slices and enjoy!
