I try not to be bias but I can't help it, my recipes are the bomb and this recipe might just take home the grand prize! I just couldn't get enough and as soon as you make this you will see why! This recipe will definitely be on the weekly schedule from here on out since it is easy and quick to make! Try this one out and let me know what you think! Serves: 4 Nutrition facts per serving: 225 calories, 26 grams of protein, 14 grams of carbohydrates, 3 grams of fiber, and 12 grams of fat. (I used the ground beef if you are wanting to decrease the fat content try ground turkey or ground buffalo) Ingredients
1 spaghetti squash
1 pound 93/7 lean ground beef, ground turkey or ground buffalo (I used beef)
1-2 handfuls spinach, finely diced
1 cup sliced mushrooms (optional)
1 cup marinara sauce
½ red onion, diced
1 tablespoon chopped garlic
1 whole egg
1 teaspoon oregano
dash of onion powder
dash of pepper
sprinkle of shredded mozzarella cheese
sprinkle of parmesan
Preheat oven to 400 degrees. Cut squash in half lengthwise. Remove seeds.
Place squash face down on a baking sheet, and bake for 25 minutes.
While squash is baking, brown ground beef over medium high heat. Drain, and set aside.
Using the same saute pan, add in red onion, garlic, mushrooms and seasonings. Cook until soft. Add spinach and cook until wilted.
Once squash is done, remove from oven and fork out the insides of the squash. Add squash, meat, veggies and egg in a mixing bowl. Mix together thoroughly.
Pour mixture inside a 9 x 9 baking dish and a sprinkle of mozzarella cheese and parmesan.
