Zucchini & Squash 'Noodles' with Pesto Sauce

I love pasta but I am definitely not a fan of all the carbohydrates and calories it contains. If you liked the spaghetti squash, then you'll love the veggie noodles! This recipe is hard to make if you don't have a vegetable spiralizer, so I highly recommend purchasing the Veggetti Spiral Vegetable Cutter from Bed Bath and Beyond. It's only $14.99 and is super easy to use plus it creates the perfect noodles. I added a delicious pesto sauce to the noodles, but a simple tomato pasta sauce is also perfect to use and tastes incredible. You can add a protein to this dish or serve it all by itself! Enjoy!

Zucchini & Pesto 'Noodles'

Ingredients
  1. 1 tablespoon of pesto sauce
  2. 2 medium zucchinis
  3. 1 medium yellow squash
  4. 1/2 tablespoon of olive oil
Instructions
  1. Using your vegetable spiralizer, insert the zucchini and yellow squash one at a time to create the vegetable pasta. Once your vegetables have been spiraled, heat skillet on medium heat and add 1/2 tablespoon of olive oil to the pan. Then add in the vegetables and sauté for 3-4 minutes, until noodles are soft. Add in the basil pesto and continue to combine until well mixed. Remove 'noodles' from pan and place in a dish to serve hot!! Enjoy!!
